Fish for Dinner!

I've been tweaking our meals and making healthier, lower calorie choices. My hubby and I really enjoy these lighter meals and I'm learning how to cook really flavorful meals with simple ingredients.

One of our favorite things to eat is fish. We enjoy Tilapia. It's a nice, mild white fish that cooks up beautifully. Here's one of our favorite meals:

The Talapia was baked in the oven in a casserole dish I sprayed with Pam. After laying the frozen fish in the dish, I sprinkled the top with lots of dill and some pepper. You could add a little sea salt if you wanted to. I am careful about our salt intake so I didn't do it this time.

Then in another casserole dish that I sprayed with Pam, I placed 1 cup of rice and 2 1/2 cups of low sodium chicken broth. I then threw in about 3/4 cups of frozen mixed veggies for color and extra flavor.  I put them in the oven at the same time and they were both done at the same time, which was great. By the way, cover both dishes with foil before baking to keep them moist.

We had some really yummy frozen mixed veggies we get from Costco in a huge bag. They have broccoli, cauliflower, baby carrots and squash. I just microwave a bowl of these until hot to serve on the side. Such a yummy, yet healthy meal!

There have been a couple times I haven't felt like cooking for one reason or another. We don't eat out a lot, but once in a while, we all want something quick and easy. In keeping with eating better, I got on the internet and started searching for something from the fast food restaurants that wouldn't be horribly fattening or full of calories. I came up with this:

This is Carl's Jr. Charbroiled Atlantic Cod Fish Sandwich. Oh, my. Is it ever delicious!! It has 420 calories and I had it with a glass of iced tea. A low calorie dinner that I thoroughly enjoyed! I loved the honey wheat bun and all the lettuce and tomato. It was just a wonderful sandwich and I didn't have to feel guilty about having it.
