McMama's - A Picture Tutorial

I learned to make these sandwiches several years ago from a fellow homeschool Mom.  They are wonderful because you can make a huge batch, freeze them, and then your family can pull one out of the freezer, microwave it, and they have a wonderful, hot breakfast. 

Here's what you'll need.  Eggs, English Muffins, Sausage, and Cheese; muffin tins, baking (cookie) sheets, tinfoil, and a clear bag to put the sandwiches in at the end.  First, preheat your oven to 350 degrees. Then get a baking sheet and cover it with tin foil.  This makes for easier clean-up when you're done.  Make your sausage patties and put them on the baking sheet.


Next you'll need to spray your muffin tins with Pam.  Be generous so that your eggs will not stick to the inside when you bake them.  Put one egg in each muffin cup and then use a fork and break up each egg yolk. 


I have two different types of muffin tins.  The one above has extra large cups and the one below is a regular size muffin tin.  I really prefer the bigger tin as it makes flatter, bigger eggs that fit perfect on the English Muffin, but I only have the one big one, so I use both.


Put the eggs and the sausage sheet in the oven and bake until done.  Watch the sausages closely and flip half way through the baking time.  This takes about 15-20 minutes.  The eggs can be done in 10 minutes, so watch them. Here's what the eggs look like when they are done.

Flip your eggs out onto a place and put your sausage on a plate with a paper towel to pull the grease out.

At this point, gather all your supplies together so you can make an assembly line of putting these sandwiches together.

If you want cheese on your sandwiches, slice it thinly and have it ready.  I do some with cheese and some without.  My boys like the cheese, but my husband doesn't.  Put your egg, sausage and cheese on an English Muffin and then wrap in tin foil. Another tip: The eggs from the small tin can be squished a bit in your hands to make it big enough to fit on the entire muffin, or you can put an egg and 1/2 to cover the muffin.  Whatever works for you.  Be sure you keep your cheese and non-cheese sandwiches separate.

Here's a picture of the finished sandwich.  Yummy.  After you wrap all the sandwiches in foil, place in a clear bag and label the bag as to if they are cheese or non-cheese.  I use the inexpensive bread bags that you get buy at Safeway.  You could use a large Ziploc bag, too.  Here's the picture of the finished sandwiches in the labeled bag.


Put the bag in the freezer and your family will have breakfast at hand! After you take them from the freezer, microwave on defrost for 1 minute.  Check to see if it's hot enough for you and then microwave at 30 second intervals after that.  Microwave ovens vary so much, this is the best way for me to tell you how to do it.  This is much, much cheaper than eating our or even buying the pre-made sandwiches at the grocery store. My family loves them - I hope your family does, too!

  1. This sounds yummy! I'll bet these could be made with turkey sausage or with just egg and cheese, too, for those who want less fat.

  3. I'm going to try making these without the sausage for my young adult and teen daughters, who leave pretty early in the morning for work or school. They are always frazzled trying to get out the door with a decent breakfast.

    This post sort of reminds me of when our large family is getting ready for a picnic, making sandwiches assembly line style, but with some variation for different tastes. We put each person's sandwich in an individual small ziplock bag and mark the name with permanent marker. I usually draw happy faces, stars, flowers, hearts, and other little cheerful pictures on them, too.

  5. Thanks for sharing this idea as I am a freezer Mom. LOL. You learn to do these things when you don't have a lot of time for "anything" and still do it today.
